Carrie Forrest, who founded the popular Clean Eating Kitchen, blog and website, has taken everyone’s new favorite appliance and adapted recipes to prepare in it. There are instructions for prepping ahead, as well as mouthwatering recipes that everyone will like. The difference between this cookbook and other Instant Pot cookbooks is that the recipes are healthy – something most of us will benefit from.

Not only does the Instant Pot save time, but Forrest’s prepping ahead methods save even more. Everyone can cook healthier and quicker with this excellent cookbook. Many families have members who have allergies and special needs as to their diet, and this cookbook covers many of those.

The recipes include a variety of dishes – there is something to appeal to almost everyone – including soups (Broccoli-Cheddar, Chicken Tortilla), great chicken dishes (Kung Pao Chicken, Chicken Piccata, Honey Sesame Chicken), and surprisingly, fish and seafood dishes (Lemon-Garlic
Shrimp Scampi, Coconut Fish Curry (Yum!), and some great meat dishes (Honey Mustard Pork Tenderloin, Korean Beef Bowl, Barbacoa Beef). The cookbook covers cooking grains in the Instant Pot, which is very helpful. Although there are dishes from almost everywhere, it seems to be heavy on Asian dishes, especially popular take-out Asian dishes. So far the dishes have turned out perfectly, and the queue is growing.

Unfortunately, there are very few photographs of the actual dishes, which is the only negative about this cookbook. The instructions are concise and easy to understand. One big plus is that Forrest gives dietary information (i.e., gluten free, dairy free) for each recipe, whether it is freezable (with freezing instructions), and advance prep.

Anyone who is required to or wants to cook and likes to make the dishes a little healthier will love this cookbook. Forrest knows her stuff, and this book should appeal to everyone who owns an Instant Pot.
