Instant Pot Bacon Dijon Chicken Recipe
If you’re lucky enough to go to France, make sure you pick up several jars of Dijon mustard; French mustard is much stronger than that sold in the US and also much better. If you can’t get to France, however, purchase a good brand at the grocery store that has been imported from France. Although any kind of Dijon mustard you happen to have on hand will work in Instant Pot Bacon Dijon Chicken, the real stuff will make your dish even better.

This quick and easy chicken is different, in that it is creamy, but doesn’t have any cream in it, and also has crunchy bacon. As long as you have cooked the bacon crisp, the short cooking time insures that it will stay crisp. This is extra good over rice, but is also good next to baked or mashed potatoes.

8 Servings


8 ounces thick sliced bacon, chopped

1 tablespoon vegetable oil
2 pounds boneless skinless chicken breast halves, cleaned, trimmed of fat and veins, and cut into 8 pieces
salt and freshly ground black pepper
Paprika

1/3 cup Dijon mustard

1 large onion, finely chopped
2 cups chicken broth

  1. Cook the bacon in the Instant Pot on the Sauté setting until it is very crisp.
  2. Remove the bacon from the pan to drain. Add the chicken breasts to the bacon fat
  3. and quickly brown them, sprinkling them liberally with salt, pepper, and paprika.
  4. Remove them from the pan and spread the tops of each chicken breast piece with the Dijon mustard.
  5. With the Instant Pot still on the sauté setting, add the onions and stir for a minute, then pour in the chicken broth.
  6. Bring to a boil and scrape the crispy bits from the pan.
  7. Place the chicken breasts back into the pan and sprinkle with the bacon.
  8. Cover, set the valve to sealing, and set to manual for 15 minutes.
  9. When the cycle has finished, do a quick release,
  10. Remove the chicken breasts to a serving platter and whisk the sauce; pour over the chicken and serve.
