Peanut butter isn’t just for sandwiches with jelly; rather it can be a tasty addition to dozens of dishes such as Thai peanut sauce, hummus, cookies, and desserts. We love Cajun food at our house, and this Spicy Creole Peanut Butter Chicken includes Cajun spices and peanut butter to make it interesting, spicy, and delicious. It starts with a Basic Creole Sauce Module, which can be made ahead and frozen; if you love Cajun food, you can make dozens of dishes with this versatile sauce. It’s mixed with peanut butter and completed quickly in the slow cooker or Instant Pot with very little hands-on time.

2 pounds boneless skinless chicken breast halves
1 teaspoon Cajun seasoning
1 tablespoon vegetable oil

6 cups basic Creole Sauce, from the basic Creole sauce module
1/2 to 1 cup creamy peanut butter (your preference)
3 cups water

Hot cooked rice

  1. Slow Cooker:Sprinkle the chicken breasts liberally with the Cajun seasoning.
  2. Heat the vegetable oil in a large skillet and brown on each side.
  3. Transfer to a 4-6 quart slow cooker.
  4. Mix the Creole sauce with the peanut butter; pour over the chicken breasts and stir in the water.
  5. Cover the crock, turn to low, and let cook 3-5 hours or until the chicken is tender; serve over hot cooked rice.
  6. Instant Pot: Sprinkle the chicken breasts liberally with the Cajun seasoning.
  7. Heat the vegetable oil in the pan of the Instant Pot.
  8. Mix the Creole sauce with the peanut butter; pour over the chicken breasts and stir in the water.
  9. Cover the Instant Pot, Set the valve to sealing, and set it to Manual for 5 minutes.
  10. When the cycle has finished, let sit 10 minutes, then release the pressure.
  11. Stir well and serve over hot cooked rice.
