Healthy Cooking for One by Mari Hills

Healthy Cooking for One by Mari Hills is published by Trafford Publishing and has 118 pages of delicious recipes created for one person. The author created and editted the book herself and is planning a new cookbook early next year. With the success of Healthy Cooking for One I'm looking forward to seeing future work.




The book is a regular bound soft cover book with lots of black and white photographs of many of the dishes.
It starts out with tips and ideas and then is divided into several sections including:

Hot Dogs, Pizza & more

Soups

Some of the delicious recipes you'll find in this cookbook include: Avocado dressing, King Crab Sandwich, Plantain Soup, Chicken Spread with Pineapple, Stir Fry Beef over Pasta, Penne Pasta Salad, Rooty Soup, Stuffed Pasta Shells, Gourmet Eggs, Strawberry Pancake, Carmelized Fruits on Ice Cream, Champola Shake and more.

This cookbook leaves the guesswork out of scaling down recipes to suit one person but doesn't leave out the taste or creativity! All of the recipes are created using ingredients commonly found and are quick, simple, single-portion recipes. I don't know about you but my mother, a widow, is very active and she stays busy but she doesn't cook homemade foods because she's used to cooking for more than one. This cookbook is perfect for her and she said she was so tired of tv dinners and is looking forward to enjoying homemade foods again without the hassel of scaling down recipes. The cookbook would be wonderful for everyone who wants to cook a meal for one. Even though I have a family and husband, many times the kids are at school and Tim is at work and I want to fix a little lunch for myself, this is great for ideas for lunch!
