Two Make Your Own Mix Recipes

Onion Soup Mix

Preparation -
Combine all ingredients. Store in tight fitting container. Five tablespoons equals 1 packet onion soup mix, such as LiptonŽ.

To make onion dip, mix 5 tablespoons onion soup mix with one pint sour cream.




Oven-Fry Coating Mix for Crispy Chicken

Preparation -
Mix all the ingredients together until well blended.

To coat and bake 3 to 4 lbs.chicken legs and/or thighs, chicken breast halves, or chicken wings ....
Pour the mixture into a sturdy plastic food storage bag. Moisten the chicken with water or skim milk. Shake to remove excess, then quickly place the moistened chicken, 2 to 3 pieces at a time, in the plastic bag with the coating mix. Shake until the chicken pieces are evenly coated. Pour 1 tablespoon canola oil in a 9" x 13" baking pan. Place the coated chicken pieces, meaty side down, in the baking dish. Arrange the drumsticks and thinner pieces of chicken in the center of the pan... breasts and heavier pieces around the outer edge of the pan. Bake in a preheated oven at 400° for 25 minutes. Turn the chicken pieces over and bake for 15 to 20 more minutes or until the chicken is nicely browned and juices run clear when the chicken is pierced with a fork. (To reduce fat and calories, remove the chicken skin before coating.)
