Frozen Peanut Butter Pie Recipe

Here's a cool and easy summer dessert for peanut butter lovers!

Frozen Peanut Butter Pie

  • 1 pre-made chocolate cookie crumb crust
  • 1 pkg. (8 oz.) cream cheese
  • 3/4 cup creamy peanut butter
  • 1 can (14 oz.) sweetened condensed milk
  • 2 T. lemon juice
  • 1 tsp. vanilla
  • 1cup whipping cream
  • hot fudge type ice cream topping

Preparation -
In a large deep mixing bowl, using an electric mixer at medium high speed, beat the cream cheese until light and fluffy. Beat in the peanut butter. Add the sweetened condensed milk and mix until smooth and creamy. Add the lemon juice and vanilla and mix until well blended. Whip the whipping cream. Gently stir the whipped cream into the peanut butter mixture. Spoon into the cookie crumb crust. Cover with the plastic lid that comes with the pre-made cookie crumb crust and place in the freezer for at least 6 hours before serving.

Remove from the freezer about 5 to 10 minutes before serving. Lightly heat the fudge topping in a microwave oven, just enough to make it luke-warm and pourable. In a zig-zag pattern, lightly drizzle a small amount of fudge topping over individual servings. Store any leftover pie, covered, in the freezer.
