I love the idea of putting a bunch of ingredients in a pot and leaving it for 8 hours and coming home to find a meal all cooked and ready to serve. In my opinion, who ever invented the crock-pot was a genius. And they are so cheap to buy.
You might want to prepare this one the night before and put in fridge until morning. If you're not big on ground beef you can reduce it by half a pound. Only use half of recipe if you have a small crock. This recipe makes 6 - 8 servings.

Ingredients:
1 medium head of cabbage
1 1/2 pounds ground beef
1 large onion, sliced
1 tsp of garlic powder
1 cup of uncooked rice
28 ounce can of crushed or diced tomatoes
1 can tomato soup
1 tsp lemon juice
dash of hot sauce (optional)
salt and pepper to taste
Directions:
Cut the cabbage into shreds and line the bottom of a lightly greased crock pot. Break up the ground beef on top of the cabbage followed by a layer of onions and a sprinkle of garlic powder. Add rice to create another layer. Mix the lemon juice with the tomatoes, hot sauce (if using), tomato soup, salt and pepper. Pour mixture over rice layer. Cook on low for eight hours. Sometimes I need to add 1/2 cup water to keep it from drying out and to give the rice some excess moisture.
Enjoy these Lazy Cabbage Rolls on a bed of lettuce with a side vegetable and an orange.
This meal freezes and reheats well for lunches or suppers.
