MJ's Apple Crisp Recipe

This is a regular dessert feature around our house in the fall when McIntosh apples are a plenty. When served warm it both a treat for the nose and the tummy. Hope you enjoy it as much as we do.

Ingredients:

7 McIntosh apples
1 - 15 oz can of Del Monte peach slices
1 tbsp margarine
1 tsp cinnamon
3 tbsp lemon juice
2 tsp brown sugar
1/2 c raisons

Topping:

1 cup flour
1/2 tsp baking powder
1/3 c margarine
2 tsp cinnamon
3/4 c quick oats
1/2 c brown sugar

Directions:

Peel, core and thinly slice apples. Microwave them for five minutes at 70% power in a covered bowl. Stir and microwave an additional five minutes (covered) at 70% power. Gently stir trying not to mash apples. If you don't have a microwave you can heat apples on the stove at med-high for thirty minutes.

While still warm gently stir in margarine and lemon juice. Rinse peaches, drain well and cut into small chunks. Add them along with cinnamon, brown sugar and raisons to apple mixture. Grease 9 x 13 glass casserole dish with canola oil wiping out excess with paper towel. Carefully spoon the apple mixture evenly across bottom of casserole dish.

For topping, mix flour and baking soda together. Cut margarine into flour until crumbly. Add cinnamon, quick oats, brown sugar and almonds. Mix well. Sprinkle over top of apples. Cover dish with tinfoil to keep in moisture. Bake thirty minutes at 350 degrees C.

When time is up remove from oven and sit on rack covered for fifteen minutes. Dish up 1/2 c serving with 1 tbsp of light whipped topping.
