Ranch Chicken in a Pocket Here's a recipe for a yummy alternative to the usual boring school lunch sandwich.
- Pita pocket bread
- lettuce
- cooked chicken breast, diced or shredded
- red bell peppers, finely chopped
- celery, very finely chopped
- thinly sliced baby carrots
- bacon bits
- regular or light ranch salad dressing
Preparation - Line a pita bread pocket with a large lettuce leaf. Mix the chicken, chopped bell peppers, chopped celery, and sliced baby carrots together in a bowl to make the chicken sandwich filling. Spoon the sandwich filling into the lettuce lined pita pocket. Sprinkle with the bacon bits. Drizzle the ranch dressing over the filling.
