Popsicle Recipes and Ideas

I know some of you are in the summer season right now and these popsicles will be a big hit with everyone. I don't know about you but I absolutely love popsicles. Some of my favorite are Edy's lime bars, strawberry bars and mango bars and they are reasonably low in calories which is a plus. You can make your own popsicles for treats for yourself or family and friends easily! Just combine your favorite fruits, juices, ice cream, yogurts and other ingredients to make some delicious refreshing frozen fruit bars. You'll have the satisfaction of knowing you made them plus you know exactly what is in them. The combinations are endless but I've included some ideas here for you to try.

Basic Frozen Fruit Popsicles

2 cups sliced summer fruit (strawberries, peaches, watermelon, banana, mango etc.)
1 tablespoon sugar
1 teaspoon fresh lemon juice

Place the fruit in a blender. Cover and blend until smooth.
Add 1-2 tablespoons water, if necessary.
Add sugar and lemon juice.
Cover and blend until well mixed.
Pour into 4 oz. ice-pop molds or paper cups. Insert sticks. Freeze until solid.

Fruit Smoothie Pops

Any smoothie recipe makes great popsicles and a cool refreshing treat! Try mango pineapple or Banana Blueberry

Grape Apple Pops

1/2 can frozen grape juice concentrate
3 large gala (or crisp sweet apples) apples, peeled, cored and chopped

In a food processor place the juice and apples and puree. Pour into ice-pop molds or paper cups. Freeze 1 hour until partially frozen if using cups. Insert sticks; freeze at least 2 hours more until firm.

Other great popsicle combinations

Apricot Nectar and a few apricots with lowfat vanilla yogurt
Bananas and strawberries
Blackberries and Pomegranate juice
Tangerines and Blackberries
Peaces and plain yogurt
Caramel Apple
Puree apples, 1 Tbsp lemon juice and a little plain yogurt in food processor or blender. Warm caramel candies in a small bowl in the microwave and pour a Tbsp in the bottom of each popsicle mold or paper cups. Cool a few minutes. Pour puree'd apple mixture on top of the caramel leaving a little space at the top. Freeze 1 hour. Reheat the caramel and pour on top of the apple popsicle. Freeze at least 2 hours and enjoy!

Banana Chocolate Popsicles
For every 2 bananas add 1 plain Hershey chocolate bar.
Combine the bananas and enough evaporated milk to just cover in the blender. Add chocolate bars and pulse just until the chocolate is a little chopped up with the mixture. Freeze in popsicle molds and serve.

Pudding Pops
Any combination of pudding and fruit or just pudding, a little milk blended and frozen are great too.

Watermelon Pops

2 cups watermelon cubed
1 cup strawberries sliced
1 cup lime juice
2 Tbsp sugar

Blend all and freeze.. very refreshing!

Try juices blended with vanilla ice cream and a little fruit thrown in.
