Baby Spinach Salad

Fresh & Healthy Baby Spinach Salad

  • 1/4 cup orange juice
  • 3 T. orange marmalade
  • 2 T. balsamic vinegar
  • 2 tsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. chopped fresh thyme
  • 2 T. chopped fresh chives or green onions
  • 1 small can mandarin oranges - drained
  • baby spinach leaves, washed and dried - about 8 oz.
  • imitation bacon bits

Preparation - Combine baby spinach leaves, mandarin oranges, and chives or green onions in a salad bowl Combine marmalade, vinegar, oil, thyme, salt and pepper in a saucepan and heat over med-low heat until mixture is heated through, or place ingredients in a microwave safe bowl, stir, and cook about 1 minute or until mixture is heated through. Pour over spinach mixture and toss. Sprinkle with bacon bits . Serve immediately.
