Cranberry Apple Pecan Bread

This easy recipe features a tempting mixture of apples, cranberries and pecans. It's a perfect quick bread for the holidays.

  • 2 cups peeled and cubed apples
  • 3/4 cup sugar
  • 2 T. vegetable oil
  • 1 egg, lightly beaten
  • 1-1/2 cups flour
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup fresh cranberries
  • 1/2 cup chopped pecans

Preparation -
Grease an 8 1/2" x 4 1/2" x 2" loaf pan; set aside. In a large mixing bowl, combine the cubed apples, sugar and vegetable oil. Add the lightly beaten egg and mix well. In a separate bowl, combine the dry ingredients. Stir the dry ingredient mixture into the apple mixture. Add the cranberries and chopped pecans and mix well. Spoon into the prepared loaf pan and bake in a preheated oven at 350º for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10 minutes. Remove from the pan and place on a wire rack to cool. Cool completely before slicing.
