Cranberry Apple Pecan Bread

Cranberry Apple Pecan Bread

  • 2 cups apples - peeled and chopped
  • 3/4 cup sugar
  • 2 T. vegetable oil
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup fresh cranberries
  • 1/2 cup pecans - finely chopped

Preparation -
Grease an 8 1/2" x 4 1/2" x 2" loaf pan. In a large mixing bowl, combine apples, sugar and vegetable oil. Add slightly beaten egg and mix well. In a separate bowl, combine dry ingredients. Stir dry ingredients into apple mixture, then add cranberries and pecans and mix well. Spoon into loaf pan and bake at 350º for 35 to 40 minutes.
