Basic Buttermilk Pancakes

Basic Buttermilk Pancakes

  • 2 cups flour
  • 2 T. sugar
  • 2 tsp. baking powder
  • 1 tsp baking soda
  • 1/2 tsp. salt
  • 2 cups buttermilk
  • 1/3 cup milk
  • 2 eggs
  • 1/4 cup butter, melted
  • vegetable oil for frying.

Preparation -
In a large batter bowl, (a bowl with a spout ), combine flour, baking powder, baking soda, and salt; mix well. In a separate bowl. whisk together together buttermilk, milk, eggs and melted butter. Spread about about 1 tablespoon of oil on a family size griddle or large skillet. Heat to medium high heat ot until a drop of water on the surface quickly sizzles. Whisk buttermilk mixture into dry ingredients until blended. Do not beat. Pour batter onto a hot skillet...the amount depends on the size pancakes you want to make. Cook until bottom is golden brown and edges bubble. Turn over and brown on other side. Serve piping hot with warm syrup and/or fruit topping.
