Sweet potatoes make a delicious pie that is perfect for any gathering.

INGREDIENTS
2 cans (29 ounces each) sweet potatoes or yams, drained
1-12 ounce can evaporated milk
2 tablespoons butter, softened
2 eggs
1 cup firmly packed light brown sugar
1/2 cup biscuit baking mix
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

DIRECTIONS

1. Preheat the oven to 350F.
2. Coat a 9-inch deep-dish pie plate with nonstick cooking spray.
3. Combine the sweet potatoes and evaporated milk in a blender, in batches and blend until smooth.
4. Pour into a large bowl and set aside.
5. Place the remaining ingredients in the blender and blend until well combined, scraping down the sides as needed. Add to the sweet potato mixture, mix well.
6. Pour into the pie plate, mounding the center and bake for 50 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean.
7. Allow to cool completely on a wire rack before serving.
