Low-fat Applesauce Date Oatmeal Cookies

  • 1/3 cup non-fat margarine, softened
  • 1 cup firmly packed brown sugar
  • 4 egg whites
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. allspice
  • 1/2 cup applesauce
  • 2 cups quick cooking oats
  • 1 cup finely chopped dates
  • non-stick cooking spray

Preparation -
Beat the margarine at medium speed until light and fluffy. Gradually add the sugar and egg whites and beat well. In a separate bowl, combine the flour, baking powder, baking soda, and allspice. Add the dry mixture to the creamed mixture, alternately with applesauce. Stir in the quick oats and chopped dates. Spray 2 cookie sheets with non-stick cooking spray. Drop the batter by heaping teapoons full onto the prepared cookie sheets, 2" apart. Bake at 375º for 8 to 10 minutes or until lightly browned. Cool on the cookie sheets for about two minutes then remove to wire racks to cool completely. Makes about 4 dozen cookies.
