Ham and Cheese Country Breakfast

Ham and Cheese Country Breakfast

  • 4 eggs, lightly beaten
  • 1 cup milk
  • 1/2 cup biscuit mix, such as Bisquick®
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup cooked ham - cubed
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped green peppers
  • cornflake crumbs
  • 2 T. butter or margerine

Preparation -
Spray a shallow baking dish with non-stick cooking spray. In a mixing bowl, combine the eggs, milk, biscuit mix, salt, and pepper. Beat at medium speed for about 2-1/2 to 3 minutes. Stir in the ham, cheese, chopped onions and chopped peppers. Pour into the prepared baking dish. Top with a light layer of cornflake crumbs. Dot with butter or magerine. Bake in a preheated oven at 350º for 50 minutes to 1 hour or until thick and bubbly.
