Seafood Gumbo

Seafood Gumbo

  • 1/4 cup butter or margarine
  • 1 cup chopped onions
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 1/2 cup flour
  • 4 cans (16 oz. each) tomatoes, undrained
  • 1 pint oysters, undrained
  • 1 pound cod fish fillets, cut into 3" pieces
  • 1 pound blue crab meat, picked clean
  • 1 pound shrimp, peeled and deveined
  • 2 tsp. garlic powder
  • 1 tsp. cumin
  • 1/2 tsp. crushed red pepper
  • 1 tsp. crushed oregano
  • 1 tsp. basil
  • 1 tsp. thyme
  • 5 cups hot cooked rice
  • 1/2 cup thinly sliced green onions

Preparation -
Melt the butter or margarine in large Dutch oven or soup pot. Add the chopped onions, green peppers and celery and saute' until tender. Stir in the flour and mix well. Add the tomatoes and bring to a boil. Reduce heat and simmer gently for 20 minutes. Stir in the seafood and all the seasonings. Simmer for about 25 minutes. Sprinkle with the sliced green onions. Serve over hot cooked rice. Makes 10 to 12 servings.
