Mixed Greens With Raspberry Vinaigrette Dressing

Mixed Greens With Berry Vinaigrette Dressing

  • 4 cups mixed salad greens
  • 1/2 cup grape tomatoes
  • 1 small red onion, chopped
  • 1/4 cup dried cranberries or dried cherries
  • 1/4 cup pecans, toasted and chopped
  • 2 T. grated parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup raspberry vinegar or red wine vinegar

Preparation -
Combine greens, tomatoes, onions, cherries, pecans and parmesan cheese in a large bowl. In a small bowl, whisk together olive oil and vinegar until well blended. Add salt and pepper. Pour half of the dressing over the salad. Toss to mix well and thoroughly coat. Add additional dressing according to taste. Serve immediately.
