Mint-Apple Glazed Roast Leg of Lamb

  • 1 whole leg of lamb - about 8 pounds
  • salt & pepper to taste
  • 3/4 cup mint apple jelly
  • 3 T. lemon juice
  • 1 tsp. grated lemon peel.

Preparation -
Place the lamb in an open roasting pan. Sprinkle with salt and pepper. In a small bowl, whisk together the mint-apple jelly, lemon juice and grated lemon peel. Spoon the mixture over the lamb. Roast, uncovered at 325º for about 20 minutes per pound. Just before serving, place under the broiler for a few minutes.
