Mustard Beans

Mustard Beans

  • 2 quarts wax beans (yellow string beans)
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/2 cup water
  • 2 T. prepared mustard
  • 1 1/2 tsp. flour

Preparation -
Cook the beans in salt water just until tender - do not overcook. Set aside. Whisk the other ingredients together in a large saucepan. Bring to a boil and continue cooking for about one minute. Pour over the cooked beans. Cool, then refrigerate the mustard beans. Serve chilled.
