Coca~Cola Barbecued Chicken

Coca~Cola Barbecued Chicken

  • 2-1/2 to 3 lbs. cut up chicken
  • 1/2 cup flour
  • 2 tsp. salt
  • 1/3 cup + 1 T vegetable oil
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped green pepper
  • 1 cup ketchup
  • 1 cup Coca~Cola
  • 2 T. Worcestershire sauce
  • 1/2 tsp. chili powder
  • 1 T. salt
  • 1/4 tsp. pepper


Preparation -
Rinse the chicken and pat dry. In a plastic bag, mix the flour, salt & pepper together. Add the chicken pieces, a few at a time, and shake to coat with the flour mixture. Heat the oil in skillet, then brown the chicken on all sides. Remove the chicken from the skillet. Place the chicken in a greased 3 qt. casserole; set aside. *Add the remaining 1 T. oil to the skillet. Add the onion, celery and green pepper and saute lightly. Add the ketchup, cola, Worcestershire sauce, chili powder, salt and pepper. Stir and simmer for about 15 minutes or until well blended and heated through.* Pour the sauce over the chicken. Cover and bake at 350º for 1 to 1-1/4 hours or until the chicken is tender. Makes 4 to 6 servings.

This sauce can also be used on grilled chicken. Follow the directions from * to * to prepare the sauce. Just before serving brush the Coca~Cola barbecue sauce on grilled chicken and grill for about one more minute per side.
