Strawberry Jam Bar Cookies

Here's an easy to make bar cookie recipe. It's a good holiday cookie recipe, but the cookies are also a great picnic or after school snack.

  • 1 cup butter
  • 1 cup sugar
  • 2 egg yolks
  • 2 cups flour
  • 1 cup chopped pecans
  • 1 cup strawberry jam
Preparation -
Cream the butter and sugar together in a medium bowl. Beat in the egg yolks. Stir in the flour, then the pecans. Mix well to form a dough. Divide the dough in half. Wrap one half in plastic wrap and refrigerate for 1/2 hour. Press the remaining half into an ungreased 8" x 8" x 2" pan. Spread the jam on top. After it's chilled in the refrigerator for about 45 minutes, roll out the other half of the dough between 2 pieces of waxed paper or plastic wrap. Roll to about 8" square. Lay the rolled out dough on top of the other ingredients in the pan. Bake in a preheated oven at 325° for 55 to 60 minutes, or until lightly browned on top. Let cool completely before cutting into squares. Store in a tightly covered container.
