Shrimp, prawn whether from the sea or fresh water are at the top of our favourites list, especially with Thai curry flavours. If using frozen shrimp freshen them by placing in a bowl of ice cold water with a teaspoon of salt disolved. Leave them sit for 20 minutes and they will be sweet and taste fresh from the sea.
