One of my favourite festive holiday starters is Nok Gata (Grilled Quail). They make an elegant starter or a very impressive platter on a party buffet. I serve the quail whole on a bed of arugula or other small greens for individual starters, or split in half arranged on a large platter for a party. I often make chile and Spring onion flowers for a festive garnish.

Grilled quail are wonderful whether eaten hot straight from the grill or at room temperature for a party. When cooking the quail do not overcook as the juices should be slightly pink when thoroughly cooked.
