In the Summer Thai salads are so refreshing and easy to make ahead for guests or work day lunches. This salad can be made with Thai thin vermicelli called mie or with typical salad macaroni shapes such as elbow, or rigatoni.

Curried Macaroni Salad with Fresh Salad Shrimp
This Thai influenced summer salad is wonderful with fresh sweet salad shrimp and curry. You can garnish with fresh bai horapha/Thai Sweet Basil leaves if you like.

I often make chile flowers for a garnish as well. You slit the long Thai chiles from the tip IE blossom end into quarters but do not cut through the stem end. Now place these cut chiles in ice water for 20 minutes and watch them curl into "flowers". This can also be done with green onion pieces as well.
