It is summer and that means juicy heirloom tomatoes! Normally I would have so many tomatoes I'd be canning in the heat of summer, but this year has been the coolest on record here in the San Francisco Bay Area. As a result every tomato is a treasure as our season is about a month or more behind normal. Nonetheless there are plenty of gorgeous heirlooms in a rainbow hues of yellow, red, purple,pink, white, red, green, and multi-colours to savour.
I love making my gazpacho in two contasting colours and serving them together.
My take on a Thai'd up gazpacho is the perfect fusion flavour for a summer first course.
