*Beans are good for you. Keep cans of prepared beans in your kitchen cabinet for those times when you want a quick and simple meal. I use Goya brand beans because they are well-seasoned and prepared in sauce. A friend introduced this product to me many years ago and I have used it since that time. Open a can of red or black beans and serve as is, or spoon over warmed store-bought corn muffins that you have cut in half; you can do the same with biscuits. Try serving the beans over hot rice, garnished with chopped green or white onions, add a green salad and you have easy fix and hearty meal.

*When buying canned vegetables, buy a couple of small cans also, to make a cold vegetable salad that will make two to four servings. A mix of sweet peas, corn, carrots and small sliced potatoes marinated in bottled Italian dressing for an hour or so is delicious.
