I bought red leaf lettuce this week. If you are not familiar with this lettuce, you should try it if you see it in your supermarket. It is beautiful and mild like iceberg lettuce but it has a loose head, and its flavorful leaves are large and reddish. I like to mix it with iceberg lettuce when making salads. Add halved plum tomatoes, quartered hard-cooked eggs, thick slices of seedless cucumber and chunks of cooked chicken or turkey and you have a hearty salad that tastes like a real meal. Seedless cukes often cost a little more than regular cukes, but may be worth it to you, because they are less watery and more filling.
