There are so many jerk seasoning recipes. This one works for me because
these are herbs and spices that I generally have in my kitchen cabinet.
If you ever find yourself missing that one last clove of garlic you
planned to use for your sauce, all is not lost, 1/4 teaspoon of garlic
powder can be substituted for a medium-sized clove of garlic. Use 1/2
teaspoon garlic powder for one large garlic clove.
*In French (Cajun) the word Lagniappe means "a little something extra."
