Nina's Heavenly Delights
"Nina´s Heavenly Delights" is a sweet little dish of a romance set in Glasgow´s Indian community amidst a cooking competition. Think curry, not "Chocolat" -- and eat before you see it. You´ve been warned.

Nina’s Baby Lamb Chop Curry

Ingredients
6 baby lamb chops
2 cups yoghurt
3 tomatoes chopped fine
2 tsp garam masala
A generous thumb-sized piece of minced ginger
6 garlic cloves minced
2-3 green chillies
1 tsp freshly ground black pepper
1 tsp Kashmiri red chili powder
1 pinch of nutmeg
1 onion finely chopped
2 tsp coriander powder
3 sprigs curry leaves
2 tbsp oil
1 tbsp lemon juice
salt as needed

Combine the yoghurt with nutmeg, coriander, red chilli, garam masala, ginger, garlic and salt. Mix gently into a paste. Marinate the baby lamb chops with this yummy paste and put into a bowl. Refrigerate overnight.

Heat oil in a casserole dish. Brown the meat quickly. Once browned, add the marinade juices plus the chopped tomatoes and green chillis. Stir for five minutes. Cover with lid or foil. Bake* in the oven for 1.5 hours, adding water if necessary to prevent food from drying out.

Sauté the curry leaves, sliced onion and black pepper. Sprinkle the garnish over the meat. Add a dash of lemon juice and serve.

Delicious with mango and papaya chutney and freshly baked nan bread.

*The recipe sheet I was given didn’t supply oven temperatures so judge for yourself the best temperature.
