A Letter From Your Editor

Welcome to Cajun/Creole at BellaOnline

Quite a few years ago, I entered a recipe contest. One of the sponsors of the contest was Chef Paul Prudhomme. Among the handful of recipe requirements, one was to use the Chef Paul’s Magic Seasoning Blend of my choice. I created a great little recipe of tasty little meat balls with a spicy ‘swamp’ sauce. Although I didn’t win, while doing research for the contest, I discovered a whole new world – the world of real Cajun and Creole cuisine, people, places, and culture.

As the new BellaOnline editor of the Cajun and Creole site, I hope to take you on a journey through Bayou country, introducing you to some colorful folks, fun places, and some of the best food on earth. I will share recipes from my personal collection with you, show you how to put together a Cajun and Creole Pantry, and even tell you where you can purchase those great Mardi Gras beads! If you are new to cooking, check out my Cooking 101 section. This is where you will find detailed instructions for preparing basic things like the all important Roux. The recipes I have on the Cajun and Creole site, unless otherwise credited, are my own original recipes or my own version of a classic dish. Most recipes that are ‘spicy’ by nature are moderately hot. You can always add more heat if you prefer mouth-burning hot!

As with any new site, this one will evolve over time. It is important to me to provide you, my reader, with the kind of information that you find useful and enjoyable. Please contact me by clicking on my name, Sandie Jarrett, at the top of any page on the Cajun and Creole site. This will take you to the ‘about’ page. Simply scroll down to the bottom of the page and use the email form to suggest subjects for future articles. You can also request a recipe using the email form. And if you have a favorite Cajun or Creole story, recipe, or shopping place, send it to me and I’ll print as many as I can.

You can also communicate to our entire Cajun and Creole Community via our Forum. Simply click on the Forum button and you will be directed to our own special forum. You can talk about anything you like, but please remember that this site is rated as a ‘Family’ site.
