I'm a big fan of quick, easy lunches. This egg salad rollup takes only moments to make and is really delicious and satisfying!
Ingredients:
3 hard boiled eggs
1 stalk celery
10 olives
1/8 cup onion powder
dash black pepper
dash salt
2 Tbsp mustard
1/4 cup mayo
1 low carb tortilla
Chop up the eggs, celery and olives into small pieces. Blend all ingredients together using more or less mayo to your own preference. Lay the ingredients in a stripe just above the center of the tortilla.
Roll closed and cut in half for easy eating. Enjoy!
