This salad recipe is perfect for any Mexican themed meal, and is deliciously low carb.
Ingredients:
1/3 cup olive oil
3 Tbsp lemon juice
1 tsp cumin
dash salt
dash pepper
3 cups salad greens
1 tomato
1 cucumber
Mix together the olive oil, lemon juice, cumin, salt and pepper. Blend in the greens. Cut up the tomato and mix it in. Peel and dice the cucumber and toss that in. Enjoy!
