Create your own energy with Healthy Energy Bars!

I came across an Energy Bar recipe that sounded like what I needed to keep my energy going for 18 holes of golf. I usually play 18 holes of golf three to four times a week so keeping fit and full of energy is important to me. I have a cooler for snacks such as fruits or vegetables plus frozen bottles of water. I was looking for something else to help keep up my energy level during those final nine holes. Now that summer is here with the Texas heat it can wipe you out fast so you need something that keeps your energy going strong. That is where Healthy Energy Bars come in and they are delicious and keep you going for the full 18 holes.

HEALTHY ENERGY BARS

Place in large bowl and stir ingredients to mix
4 cups puffed whole grain cereal (wheat, rice or Kashi
½ cup chopped walnuts
½ cup chopped pecans
½ cup slivered almonds
¼ cup sun flower seeds
2 Tablespoon flax seed (grind in coffee mill)
2 Tablespoons wheat germ
2 Tablespoon whey protein powder

In small pan boil together
1/3 cup peanut butter (chunky or natural)
1/3 cup honey
1/3 cup light corn syrup

Try different flavors by adding instead of the corn syrup try fat free Carmel sauce (I loved this one), or maple syrup. Bring all the ingredients to a boil and boil while stirring for a few minutes until mixture thickens.

Pour over dry ingredients and stir to mix well. Prepare cookie sheet with foil or parchment paper and press firmly the bar ingredients into pan. I have used rolling pin or glass to roll down the mixture to pack it into pan. Bake at 350 degree for 10 – 15 minutes. I suggest using top rack as this syrup could burn easily. Cool in pan then invert on paper and remove baking foil or parchment paper. You may cut your bars in desired shape. Store bars in bags or plastic containers. Shorter baking time leaves bars chewy with longer time they become crisp. Give this a try what have you got to lose and you might feel better and finish that 18 holes with plenty of energy to spare.
