Meal:
1/2 pound striped bass
1 Tbsp butter
dash white pepper
1/3 cup low carb bread crumbs
Sauce:
3 Tbsp butter
1 tsp Splenda
1/2 tsp tarragon
4 tsp lemon juice
Start with 1/2 pound fish fillet. Melt 1 Tbsp of butter and pour it over the fish. Add a dash of white pepper. Microwave it for 3 minutes.
Now crumble on the bread from the low carb bread recipe - this recipe only takes 2 minutes in the microwave so you can easily make it right before you begin this recipe. The link to that recipe can be found below.
Microwave for another 1 1/2 minutes, to both finish cooking the fish and to brown up the bread.
Now for a sauce. Mix together 3 Tbsp melted butter, 1 tsp Splenda, 1/2 tsp tarragon and 4 tsp lemon juice. Pour that over the top of the fish.
Enjoy!
Note that Striped Bass is a light, delicate white fish that is found in Atlantic sea and fresh waters. It is a fish that can live in both types of water. Because of its light flavor, you can therefore swap just about any other fish of this same taste range (cod, haddock, etc) and have it come out just as well.
You can have a nice salad with this as you wish, to serve as a starting course. Of course you want to avoid "chips" with this :). That wouldn't be quite low carb! Mashed cauliflower might make a better side.
