Try this Habanero Chile Pepper Chicken recipe and it is sure to become one of your menu favorites. This is almost like a stewed chicken.
Ingredients
4 skinless chicken breast, bone in
1 large onion, chopped
2 cloves garlic, minced
2 green peppers, seeded and sliced length-wise
1-15 oz. can diced tomatoes
1 habanero chile pepper, seeded and diced
1/4 cup cooking oil
Directions
Heat oil in skillet and add chicken and cook until chicken is brown on both sides. Add green peppers, habanero chile pepper, onion and garlic and saute 5 to 7 minutes or until peppers and onions are wilted, stirring to take care that garlic does not scorch or burn. Add canned tomatoes and stir again to mix ingredients. Lower heat, cover skillet and simmer for 1/2 hour or until chicken is fully cooked.
Serve over rice or wide egg noodles.
Serves 4.
*Hint*
_Remove bones from breast and pull chicken apart to make 6 smaller servings.
