Apple Fritters Recipe

Apple Fritters are an easy and delicious dessert. They are popular throughout Europe, the Americas and even the Middle East. There are many variations to this dish and although it is not a traditional Indian dessert, I have created a version of Apple Fritters with an Indian twist of course! Try them; I am sure you will love them as much as I do.

The rose water or orange blossom water used in this recipe can be easily found in most Indian grocery stores.


APPLE FRITTERS, Indian Style

Serves 4-5

Ingredients:

3-4 large firm apples (Granny Smith or Red Delicious apples work best)
3 cups all purpose flour (maida)
1-2 cups milk
1 large egg
2-3 tbsp of sugar, to taste
1 tbsp finely grated orange zest
½ tsp baking powder
pinch of salt
honey (a floral variety works best)
2-3 drops of rose water (you can use orange blossom water), optional
pinch of ground cardamom powder
pinch of saffron
oil for shallow frying (peanut, vegetable or canola)
toasted almond slices for garnish

METHOD:

In a large mixing bowl, combine the flour with enough milk to form a smooth and slightly thickened batter. Next, add in the egg along with the sugar, orange zest baking powder and the salt. Mix well to combine all of the ingredients, cover with plastic wrap and set aside until needed (at least 10-15 minutes).

In the meantime, wash and dry the apples. Peel and core the apples, then slice them into ¼ inch thick rings. Drop them directly into the batter.

Heat a deep skillet on medium heat with enough oil for shallow frying. When hot, carefully add the coated apple slices (shake off any excess batter before frying). Fry until golden brown on both sides and drain well on absorbent paper towel. Transfer to a serving platter.

In a small saucepan, on low heat add about ½ cup of honey. Keep stirring. If it is too thick, you can add a little orange juice (or even water) to slightly thin it out. Add the rose water, ground cardamom powder and saffron. Stir well and bring to a gentle simmer and remove from the heat. Liberally spoon the fragrant honey mixture over the apple fritters. Garnish with the toasted almond slices and serve. This dish tastes great with a scoop of vanilla gelato or ice cream!


VARIATION:

Try this recipe using pears; any firm variety will work well.
