Eric the Red Potatoes & Wintered Greens Recipe

Recommended Brew:  Alaskan Amber - Alaskan Brewing & Bottling Company, Juneau, Alaska, USA


Style: Altbier – Copper body with crimson highlights and a tight head of beige – A rich maltiness displays hints of caramel and brown sugar, with spiciness and a smooth mouthfeel.

1 lb. greens – use collards, mustard greens, broccoli, kohlrabe, or escarole
2 lbs. small red potatoes, scrubbed
1 C. Alaskan Amber
1 tablespoon olive oil
2 cloves garlic, finely chopped
˝ C. buttermilk
˝ teaspoon salt
1/8 teaspoon pepper

Remove the tough fibrous stems and wilted leaves from the greens. Wash greens thoroughly. Cut into 1-inch pieces. Set aside.

In 4-quart saucepan, boil potatoes for 15 minutes in 1 C. Alaskan Amber and salted water to cover. Remove with slotted spoon and transfer to medium bowl. Crush potatoes with potato masher and set aside.

Add the prepared greens to the boiling water and cook 2-3 minutes until tender. Drain and set aside.

Using dried saucepan, sauté garlic in olive oil for about 1 minute over medium heat. Add the cooked greens, tossing lightly. Stir in the potatoes, buttermilk, salt and pepper.
