Okrakoke Swordfish Dijon Recipe

The Beer Fox says, “A fresh Dijon glaze creates its own unique flavor when combined with the rich juiciness of swordfish.”

 

Recommended Brew:  Spotted Cow - New Glarus Brewing Company, New Glarus, Wisconsin, USA


Style: Cream Ale – Misty lemon yellow with soft, dense head – Gentle citrus fruit touches the palate, while light flavors of flaked barley and Wisconsin malt support the base.


6 swordfish steaks, 1 inch thick
3 zucchini, cut in half lengthwise
¼ C. lemon juice
3 tablespoons Dijon mustard
¼ C. Spotted Cow
1 clove garlic, minced
½ teaspoon paprika
2 tablespoons capers, drained

Arrange swordfish and zucchini, cut side up, in broiler pan. Brush swordfish with lemon juice.

Mix together Dijon mustard, Spotted Cow and garlic. Brush tops of Swordfish steaks with mixture. Broil 6-8 inches from heat for 10 minutes. Turn, brushing mixture generously over steaks. Cook until zucchini is lightly brown and fish flakes easily.
Garnish with paprika and capers just before serving.
