Basic Sweet Roll Dough Recipe

Everybody loves sweet rolls and breads. Not only are they great for dessert, they make a nice treat for breakfast and are a “must serve” at holiday brunches. This Basic Sweet Roll Dough can be made the conventional way, or quicker with minimal hands-on time in an automatic bread machine. Once the dough’s finished, it can be shaped into dozens of varieties of sweet rolls and coffee cakes.

Basic Sweet Roll Dough – Conventional Method


Makes enough for 48 individual rolls, 1 large coffee cake, or 2 medium coffee cakes

1 1/2 cups lukewarm water
2 tablespoons yeast
1/2 cup instant non-fat dry milk
1/2 cup sugar
3 to 4 cups flour
1/2 cup butter, melted and cooled
3 eggs
2 teaspoons salt
  1. In large bowl of bread mixer, place the water, yeast, powdered milk, and sugar; mix well until yeast is dissolved.

  2. Add 2 cups flour and beat well until smooth.

  3. Mix in the butter and eggs, beat until smooth, then add the salt.

  4. With the dough hook attached, add enough more flour to make a very soft dough.

  5. Knead until smooth and elastic, about 10 minutes.

  6. Transfer the dough to a greased bowl.
  7. Cover loosely with a towel and let rise until double.

  8. Punch the dough down, transfer to a floured surface (preferably a lightly floured pastry cloth), and shape.

Basic Sweet Roll Dough – Automatic Bread Machine Method


The Automatic Bread machine does all the work; all you need to do is add the ingredients, check it once for texture, and listen for the signal to let you know it’s ready to shape.

Makes enough for 48 individual rolls, 1 large coffee cake, or 2 medium coffee cakes

1 1/2 cups lukewarm water
3 eggs
1/2 cup instant non-fat dry milk
1/2 cup sugar
1/2 cup softened butter
2 teaspoons salt
3 1/2 – 4 cups flour (more or less as needed to make a soft dough)
1 tablespoon yeast
  1. Place the ingredients in the order given into the pan of the automatic bread machine.

  2. Set the machine to the dough setting.

  3. Check the dough after about 10 minutes to make sure there is enough liquid or flour to make a soft dough (add extra flour if it’s too soft or extra liquid if it seems stiff); you may have to scrape the sides down.

  4. When the dough cycle is finished, transfer the dough to a lightly floured pastry cloth and shape.

Note: if your auto bread machine has a small pan, or if you want a recipe to make only 24 rolls, change the ingredient amounts to the following: 1 cup water, 2 eggs, 1/3 cup instant non-fat dry milk, 1/3 cup sugar, 5 tablespoons softened butter, 1 teaspoon salt, 3-3 1/2 cups flour, and 2 1/2 teaspoons yeast.
