Recipe for Jelled Halloween Eyeball Salads

Eyeballs are a popular theme at Halloween; for some reason, they are scary and gruesome. That's why you’ll want to display these delicious Halloween Eyeball Jelled Salads in a prominent place on your Halloween BOO-ffet table.

Halloween eyeball gelatin molds can be found in party and variety stores; sometimes they can be ordered from Amazon, or you can use two deep round bowls.

Whether you use a mold or a bowl, these cute eyeball salads will be a great addition to a fun Halloween table.

Halloween Eyeball Salads


8 Servings

If you decide to use bowls instead of a mold, pour 1/4 cup of the blue gelatin in the bottom of each, then proceed with the recipe as directed.

1 3 oz. package Berry Blue flavored gelatin
1 cup boiling water
1 cup cold water

1 3 oz. package lemon gelatin
1 cup boiling water
3 tablespoons sugar
1 8 oz. can crushed pineapple, with juice
1 cup cottage cheese
1 cup whipping cream, whipped to stiff peaks

Dissolve the Berry Blue flavored gelatin in the boiling water; stir in the cold water, then pour just enough in each of two 2-cup eyeball molds to cover the eyeball area. Save the remaining gelatin for another use. Refrigerate until set. To speed up jelling, I like to put the molds in the freezer for about 15 minutes; just don’t let the mixture freeze.

Dissolve the lemon gelatin in the boiling water with the sugar, stirring until there are no crystals and the mixture is clear.

Meanwhile, place the pineapple and cottage cheese in a food processor or blender and process until smooth, scraping the sides occasionally; stir the mixture into the lemon gelatin mixture. Refrigerate (or to save time, put in the freezer) until the mixture is starting to gel and is chilled. Stir in the whipped cream and spoon the mixture over the set blue eyeballs. Refrigerate until set, 4-6 hours.

To unmold, dip the molds into a bowl of very hot water; let set a minute, invert a plate on the mold, and turn upside down. The molded salad will fall onto the plate. Fill in the middle of the eyes with black decorating gel. Use the red decorating gel to make the eyes look bloodshot.
