Low-Sugar Molasses Cookies Recipe

Looking for a alternative to the high sugar cookies found a Christmas? Wondering what to give as gifts to your diabetic friends and family? Here is a great new recipe to make as gifts. Make gingerbread men and woman and decorate as gifts. How about all the cookies exchanges this time of year. You can use these for a dessert party or buffet.

Low-Sugar Molasses Cookies

Serves: 60

These low-calorie cookies are perfect during the winter months.

INGREDIENTS
1/2 cup canola oil
1/4 cup molasses
1/2 cup Splenda
1/4 cup sugar
1 egg
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
1 cup all purpose flour
1 cup whole wheat flour

DIRECTIONS
In bowl, mix oil, molasses, Splenda and egg well. In another small bowl, combine flours, baking soda and spices.
Alternate flour mixture to molasses mixture until well combined. Mix well.
Cover and refrigerate dough for at least 2 hours. You can also roll out and use your favorite cookie cutter. These will be great for gifts for diabetics and be sure to include the recipe.
Shape dough into one-inch balls and roll in splenda.
Place on cookie sheet about 2 inches apart. Bake at 375 for 10 min.
Remove from baking sheet immediately.
Makes 60 cookies.
