Homestyle Gyros Recipes

Homestyle Chicken & Lamb Gyros
Gyros are very popular in the United States, and one may say that they are the most popular Greek food that is widely available. You may have seen gyros premade and frozen in your grocery store, at a food stand downtown in your closest city, or at your neighbors holiday party. Gyros are a folded sandwich that is easy to make and even easier to eat. You can make Gyros of all types at home. Here are some of my favorite recipes. You can add or subtract ingredients to your liking and make your very own gyro recipe.

Greek Chicken Gyros

Ingredients
Boneless skinless chicken breasts
Pita bread (I prefer whole wheat)
Lettuce
Tomato
Onion (white, yellow, or red)
Freshly ground black pepper
Sea salt
Tzatziki sauce (recipe below)
1 tablespoon olive oil
Oregano

Directions
Preheat oven to 350 degrees. Wrap pitas in aluminum foil and warm in oven about 10 minutes. Meanwhile, season chicken breasts with oregano, sea salt and freshly ground pepper. Heat skillet on medium/high and add 1 tablespoon olive oil. Cook chicken breasts 8-10 minutes on each side, until juices run clear. Set chicken on cutting board for a few minutes. Cut up lettuce tomato and onion- I prefer to dice them. Cut chicken breasts into strips, and place on pita bread. Add lettuce, tomato, onion, and tzatziki sauce to taste.






Traditional Lamb Gyros
Ingredients

Lean ground lamb
2 cloves of garlic
Tomato
Onion (white, yellow, or red)
Lettuce
Pita bread
Oregano
Sea salt
Freshly ground pepper

Directions

Preheat oven to 350 degrees. Wrap pitas in aluminum foil and warm in oven about 10 minutes. Combine ground lamb with sea salt, pepper, and oregano in large bowl. Shape into a loaf. Place under broiler in oven for about 10 minutes turning once. Cook thoroughly until no longer pink. Remove from oven and let stand about 3 minutes. Cut lamb loaf into thin slices. Place lamb on top of warm pita bread. Add lettuce, tomatoes, onion, and tzatziki sauce to taste.

Simple Tzatziki

1 pint plain yogurt
1 finely diced cucumber
1 tablespoon freshly squeezed lemon juice
1 tablespoon good Greek olive oil (such as Altis)
1 tablespoon fresh dill
Sea salt and freshly ground pepper to taste


Directions:
Combine all ingredients in a bowl or food processor. Cover and put in refrigerator for at least an hour. Enjoy with pita bread, chicken or on a gyro.
