Cherry Chocolate Chip Muffins

Cherry Chocolate Chip Muffins

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg, beaten
  • 1/2 cup semi-sweet mini chocolate chips
  • 1/2 cup drained, chopped maraschino cherries
  • 1/2 cup chopped pecans
  • 2 tsp. grated orange peel

Preparation -
In medium bowl, combine flour, sugar, baking powder and salt Add milk, oil and beaten egg. Stir just until blended. Stir in mini chocolates chips, cherries, pecans and grated orange peel. Spoon batter into paper-lined muffin cups, about 2/3 full . Bake at 400º' for 25 to 30 minutes or until muffin tops are golden brown. Remove from pan and cool on a wire rack. Makes about 12 muffins.
