Creamy Dreamy Fruit Salad Recipe
My Creamy Dreamy Fruit Salad is a simple dish that can be eaten all year round, but personally – I enjoy it most in the spring and summer time. The variety of fresh fruit is at its highest peak during these months. There are no hard and fast rules here, just use your favorite fruits and definitely chose fruit that are in season and ripe but firm.

This recipe is a great way to get your kids into the kitchen to help, depending upon their age. It’s also a fun way to add more fruit into your family’s diet. Almost all fruit contains various vitamins and minerals such as Vitamin C, folic acid and potassium. Fruit is also a very good source of dietary fiber and is high in antioxidants as well.

This is the perfect dessert to serve especially when entertaining, since it can be made well in advance. It’s also a sure fire hit with both the kids and adults alike.

Fruits: bananas, apples, oranges, papaya, mango, grapes, cantaloupe, honeydew, kiwi, pears, plums, blueberries, raspberries, blackberries…


CREAMY DREAMY FRUIT SALAD

Ingredients:

½ cup heavy whipping cream
1 tbsp sugar, to taste
½ cup sour cream
pinch of ground cardamom powder
pinch of allspice powder
pinch of freshly grated nutmeg
pinch of salt
1 cup of pineapple cubes
1 small peach, diced
½ cup of diced melon (like cantaloupe or honeydew)
½ mango, cubed
½ apple, diced (I used a Granny Smith)
1 cup of orange segments
4-5 strawberries, sliced
½ cup seedless grapes (any color will do), halved
½ cup cherries, pitted & halved
½ cup pomegranate seeds
¼ cup sweetened coconut flakes, lightly toasted
½ cup chopped toasted nuts for garnish (such as almonds, cashews, pistachios…)

METHOD:

In a large mixing bowl, combine the heavy whipping cream with the sugar and whisk until you have stiff peaks. I used a standing kitchen mixer, but if you prefer to do it by hand – it’s a great workout ☺.

Next, fold in the sour cream along with the spices (ground cardamom powder, allspice powder, freshly grated nutmeg and salt). Then add in all of the prepared fruit along with the lightly toasted coconut flakes and toasted nuts. Mix gently to combine all of the ingredients together. Cover the bowl tightly with plastic wrap and refrigerate for a few hours before serving. Garnish with a little extra toasted coconut flakes and chopped nuts before serving.
