Mashed Potatoes / Cauliflower and Gravy
Mashed potatoes and gravy are one of those comfort foods you can crave on a low carb diet. Here's a version that uses cauliflower instead of potatoes that is very tasty!



Ingredients:
1 bag frozen cauliflower
1/4 stick butter
1/8 cup cream
salt pepper to taste

Atkins gravy thickener
beef bullion cube or drippings

Cook the cauliflower as per the directions on the bag - and overcook it a bit so the cauliflower is really mushy. Now add in the butter and cream and using a masher, mush it very well. Add in salt and pepper to taste.

Follow the gravy thickener recipe with either a beef bullion cube or drippings from the meat you're cooking to make up some gravy. Pour the gravy on the mashed cauliflower and enjoy!!

We found the gravy to be amazingly tasty when using the drippings from whatever steak dish we had with the mashed cauliflower. The gravy has 0g carbs so pour it on!

In the photo above we had steak tips with some veggies. Note that the cauliflower probably won't come out completely smooth - it'll be somewhere between slightly lumpy to maybe a ricey texture. It's quite tasty, though!
