Confetti Brunch Bake Recipe
It’s always nice to have a good recipe for a quick and easy brunch dish, especially since there are holidays all through the year that necessitate house guests and meals that are a little bit more special than the norm. This Confetti Brunch Bake is quick, easy, and delicious. It can be made a day or two ahead and reheated, and is good with any number of breakfast breads, either freshly baked or store-bought.

To save even more time and eliminate chopping, you can substitute 1/2 cup dehydrated onion flakes and 1/2 cup dehydrated red and green peppers. Also, if there is no blender available, the egg and flour mixture can be whisked together rather than blended; this does take a little more time, though, but the end result is the same. Crisp cooked bacon can be substituted for ham, as well as cooked, well-drained sausage, or it can be left out altogether for a vegetarian version.

Since this dish is so quick and easy to put together, it will become an oft-requested favorite. It’s nice for a family breakfast or brunch, but also fancy enough for company. Confetti Brunch Bake can be served hot, cold, or at room temperature. Make sure it’s paired with freshly baked breakfast breads or fresh bakery breads. Fried potatoes or hash browns are great too, as well as fresh fruit.

12 Servings

1/3 cup butter

1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1 medium onion, finely chopped
1 cup grated sharp cheddar cheese
2 cups low-fat cottage cheese
2 cups finely diced lean ham

10 large eggs
1/2 cup flour
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon baking powder
  1. Preheat oven to 350°.
  2. While the oven is heating, place the butter in a 9 x 13" glass baking dish, place it in the oven, and let the butter melt.
  3. Meanwhile, mix the bell peppers, onions, cheese, cottage cheese, and ham.
  4. Crack the eggs into a blender container; add the flour, salt, pepper, and baking powder; blend until smooth and add to the egg mixture.
  5. Pour the mixture into the melted butter in the casserole dish.
  6. Bake 50-60 minutes, or until the eggs are set.
