Raw Vegetable Spring Roll Recipe
10 rice paper spring roll wrappers
½ large head iceberg lettuce
1 red bell pepper
2 stalks celery
2 medium carrots
½ red onion
1inch piece fresh ginger

- Remove the outer leaves of the lettuce and discard. Then slice the remaining head of lettuce into shreds. You can also purchase pre shredded lettuce as well, which will save time in this recipe.
- Rinse the bell pepper and then cut it in half discarding the stem, seeds and inner white meat. Then julienne it and set it aside.
- Rinse and dry the celery and julienne into thin 1 inch strips and set them aside.
- Peel the carrots, discarding the ends. Then julienne the remaining stalks.
- Peel the red onion and slice it into thin strips about the same size as the celery.
- Peel the ginger and mince it.
- Once all the vegetables are prepared, soak the spring roll wrappers in very warm water. The best way to do this is to fill a round dish with at least 1 inch sides with the water. Then place each wrapper one at a time on top of each other into the water. Make sure each one is covered with water before placing the next one on top and then let these soak for 5 minutes.
- While they soak, set up a work space with a plate to dry the wrappers on and another to fill and roll the wrappers. Place a few paper towels on the first plate.
- After 5 minutes, take one wrapper out of the water and place it on top of the paper towels and using another paper towel, wipe the wrapper until it is dry. Then place it on the other plate.
- Spread a little of the hoisin sauce on the wrapper and then add some of the red pepper, carrots, celery, red onion, ginger, and lettuce. The lettuce should make up the bulk of this mixture and the julienned vegetables should be placed lengthwise so that this is easy to roll up.
- Once it is filled, roll up your spring roll by folding the end closest to you over the vegetables.Then fold in both of the sides and roll it up tightly. If the wrapper breaks and is difficult to roll then it means there is too much filling. Simply remove some of the vegetables.
- When the rolls are finished cut them in half on a diagonal. These vegetable roll make the perfect lunch, enjoy!
