Poole's: Recipes and Stories from a Modern Diner is one of those cookbooks that inspires trips to diners everywhere, especially for those looking for a little nostalgia. Diner food is always delicious, and most offer something that is a specialty that they are famous for. This cookbook has luscious recipes that everyone will want to make, along with delightful vignettes about the diner. Anyone visiting Raleigh, North Carolina will definitely want to make a stop at this diner. The dishes offered aren’t your run-of-the mill diner foods; rather they are new and innovative, while at the same time comforting. Who can resist simple Crispy Flounder or Malted Slaw with Roasted Tomatoes?

Christensen has taken regular diner food and added modern touches. The dishes sound good, look good, and, most importantly, taste good. The instructions are clear, and most of the recipes call for ingredients that are already in the pantry or at the grocery store. There are dozens of “Back Pocket” recipes (basics) that are simple, such as Crispy Quinoa, Roasted Tomatoes, and Malted Mayonnaise. Many of the recipes, like the excellent Pimento Cheese, are unquestionably southern, but modernized with a little twist.

It’s worth it to purchase this cookbook for the short ribs recipes (Poole’s specialty) alone. The book not only has a recipe for basic short ribs that works perfectly, but several mouthwatering recipes using the cooked short ribs. It used to be that short ribs were cheap, since they were tough and required lots of cooking time; now they are “in style” and expensive. But they are perfect comfort food, and those who follow the recipes in this book will fall in love with them. The Cornbread Crab Cakes are delicious, and The Zucchini Doughnuts are actually ethereal and worth the deep-fry scenario in the kitchen. The Strawberry Shortcake with Rhubarb Marmalade is also incredible.

Poole's: Recipes and Stories from a Modern Diner is a fun cookbook and highly recommended for anyone who likes comfort food and diner food with a few modern additions.
