Low Carb Meatloaf Recipe
This delicious, low carb meatloaf recipe was donated by one of our visitors, Al. He calls it Al's Awesome Meatloaf Recipe. Highly recommended for low carbers!

Meatloaf:
4 eggs (beaten)
1 1/2 cups Hood Carb Countdown Dairy Beverage (whole "milk" version) (or
water)
2/3 cup unsweetened ketchup
1 cup dry Textured Vegetable Protein bits (rehydrated)
1 cup Keto Crumbs (Italian)
2 envelopes Lipton onion soup mix
3 tbsp dried cilantro
1/2 cup minced onion
2 lbs ground beef -- the more fat the better
1 lb ground pork
1 lb ground veal or lamb

Topping:
1/3 cup unsweetened ketchup
3 tbsp Worcestershire sauce
3 tbsp brown Sugar Twin
pepper to taste
3 slices bacon

Pre-heat oven to 350.

Mix meatloaf ingredients well (adding in order listed). Form into three
loaves and place directly on large baking tray sprayed with non-stick. Bake
for 30 minutes to solidify.

Mix first three topping ingredients and brush on meatloaves. Sprinkle with
pepper. Lay one slice of bacon over each meatloaf. Bake for another hour or
until meat thermometer says they are done.

Let the meat loaf sit for 5 minutes to settle.

CARB COUNT:

This recipe can have a range of carb counts based on what milk you use and what bread crumbs you can find. Those are the main sources of carbs. The meat itself is zero carb. Take a look at the values for the milk and bread crumbs you're using and that is really going to be most of what you are eating in terms of carbs.
